Mikkeller in Russia part III

Today I had another wonderful brew day with Yuri, Mikkeller’s man in Russia. We brewed an American Pale Ale at Knightberg. It was really a pleasure to at Knightberg, the super competent brewmaster Elena Tiukina was not just very sweet and accommodating, she (Oh yes, I mean she) is also a really good brews that did hit all the numbers through the whole day. The amber colored beer will be dry hopped like hell in a week from now, and it will be for sale in April. For more info on this and the[...]

Mikkeller in Russia part II

Today, we brewed a no bull shit IPA. simple malt base, clear and crisp yeast, and an awful lot of American hops. Malt is from Germany, water and yeast is from St. Petersburg, but the hops come from the U.S. To make sure that we got fresh hops, I had to bring it myself. So I packed 20 kg fresh hops in my suitcase before I left Denmark. That meant that I besides hops only had room for a pair of underpants and a toothbrush. But fair enough, I came neither to Russia to look good or to be[...]

Mikkeller in Russia

I am in Russia right now - and I'm here to brew some beers. Today we brewed two beers in two different breweries at the same time. We got up early and drove to the Metropole brewery here in Saint Petersburg. Here we brewed a Trippel with orange peel, coriander and rose leaves. As soon as we had mashed in, we drove to Vassileostrovskaya brewery to brew an Imperial Stout. As soon as it was mashed in, we drove back to the Metropole to proceed with our Trippel. And like that it went throughout the[...]

Now Mikkeller Spirits has made its first travel out in the world to meet other equally minded distillers. The intention is to get inspired, get better, get wiser and get social. Boxing Cat Brewery - Battling a great wall of bureaucracy

Boxing Cat Brewery is a ray of craft beer sunshine in mighty China. American brewer Michael Jordan brews quality craft beer in Shanghai. He's making beers for Boxing Cat Brewery's two restaurants. Michael fights the biggest of battles promoting craft beer in China. A country which mark on the beer landscape is almost solely thin, piss yellow German lagers of the worst kind. Just getting quality malt, hops and yeast to the brewery is a big challenge for Michael. For example, the yeast comes[...]

The concept was decided: the four educated tasters open, smell and drink one bottle every week for at time span of 126 days. From the same batch. Yeast Series 2.0

At Mikkeller we love beer by the series. Because producing a whole series, where you each time change the recipe a tiny bit, is the only way you will truly know precisely what one particular ingredient does to the flavor as a whole. And that is exactly the guiding principle behind Mikkeller’s yeast series 2.0. There are six very different beers in this particular series. They are all made with the same malt, same hops, and the same mash time and temperature. The only difference between the six[...]

Mikkeller Spirits - now in Sweden

You've probably noticed how many Swedes you always meet at Mikkeller Bar. We are of course very happy that this is the case. As we have become accustomed to snuff cans on the tables and the spicy scent of köttbullar (Swedish meatballs), which is always part of meeting with the always polite and well-dressed Swedes. A year ago we took the consequences and employeed Rob as a bartender at Mikkeller Bar. First and foremost because he's a great bartender, but certainly also because he masters the[...]

Crooked Moon / Mikkeller DIPA

In Mikkeller we have over the years done many collaboration brews. However, the last one we did was a little unusual - we collaborated with the Swedish tattoo studio Crooked Moon. The two brothers Jacob and Jonas Pedersen that run Crooked Moon Tattoo in Helsingborg wanted to celebrate their tattoo studio’s first birthday with a big party, and what could be more natural than to do it with a beer in their own name? The two brothers have designed the labels for this beer. And therefore this beer[...]
